Lemon Cake

Lemon Cake Detail
Combine Sugar and eggs. Add lemon rind, then oil. Fold in the flour alternatively with the milk. Bake in a 23 cm round or similar size square cake tin at 180 degree celsius oven for about 40 minutes or until skewer comes out clean. (I usually make this in double quantity and bake it in a large rectangular pan about 30 cm x 25 cm.) Check after 40 minutes and see if it needs longer.

Decorated Cakes

Decorated Cakes Detail
Fondant allows the baker to express creativity in baking. Fondant exists in many different colors, and its initial form is soft and easy to handle. In this form, cake decorators are able to mold fondant into many different artistic expressions. Many of these art expressions are also taught in professional cake decorating class. Fondant is primarily used to cover cakes but is also used to create individual show pieces for cakes. Gumpaste is a substance used in cake decorating to create flower decorations.

Recipes for cake are wonderful testaments to the generations of bakers before us. Most cake recipes have been handed down from great-grandmothers to grandmothers to mothers, and passed between friends and family.

Cake may be associated with particular festivals, such as stollen or chocolate log (at Christmas), babka and simnel cake (at Easter), or mooncake. There has been a long tradition of decorating an iced cake at Christmas time; other cakes associated with Christmas include chocolate log and mince pies.
